When life gives you lemons, make a Chilton!

If you’re from Lubbock, or have lived here longer than a week, then you’ve probably heard the word “Chilton.” To an outsider, the word probably holds little meaning. I remember having the same thought when I first moved to Lubbock four years ago. However, I quickly learned that this would become my drink of choice, other than Burklee Hill wine, of course. ;)

  

Go anywhere outside Lubbock County and be prepared to receive a look of skepticism from your bartender. But, surprisingly enough, once you explain the drink, they shake their heads and laugh. Everyone knows how to make a Chilton, but few have heard the name itself. But, for some reason, it just doesn’t taste as good as it does in west Texas.   

  

A traditional Chilton consists of your choice of vodka, lemon juice, a splash of soda and a salted rim. Burklee Hill offers a twist on this native Lubbock drink, and I’ve concluded that it might be my favorite Chilton in town.

  

Burklee Hill’s Chilton incorporates the traditional elements: freshly squeezed lemon juice, soda water and a perfectly salted rim. What differs from your average Chilton, however, is that Burklee Hill uses wine-based vodka. Trust me; it tastes just as good (maybe even better).   

  

Wine-based vodka is made from grapes that are left on the vine for an extended period of time. It contains about 18-38% less alcohol than traditional vodka, and significantly less sugar, which means you get all the delicious Chilton taste with none of the guilt. It’s the perfect addition to the drink menu at Burklee Hill and my go-to when I dine there.
